4 Sunny Bakes

Now that it’s officially summer I thought I would share a couple of my favourite recipes for this time of year. I always change what I eat with the seasons and weather, so in the summer rich, heavy foods are a no-go for me, and the same goes for what I bake. So, the following recipes are all light, moist and use fresh ingredients.

First up is lemon slices, a delicious shortbread base and a citrus topping. Super easy to make and easy to clean up. TIP: Allow the shortbread base to completely cool before adding the topping and returning to the oven for really defined layers.


Next is Toby’s absolute favourite, in his own words “it’s moist with the perfect balance of sweet and savoury that creates the perfect cake, I’d pick it over a Krispy Kreme any day. ”


An absolute oldie and classic, nothing quite says summer like afternoon tea with some fresh strawberries – even better when they’re slathered with jam and buttercream, oh and in a cake!


Finally is possibly my favourite, I love carrot cake so much as thanks to the star ingredient it is always perfectly moist, and feels guilt free. This recipe for cupcakes makes it even easier to enjoy as it’s less hassle than a whole 2 tier cake – super quick and easy to bake. TIP: You could also add sultanas or raisins (I love them but Toby doesn’t ).


So there you have it. Hopefully these may have given you some inspiration of what to bake this summer or maybe introduced you to a bake you haven’t seen before.
