Blender Pancakes

My favourite meal of the day is undeniably breakfast, and one of my favourite breakfasts is undeniably pancakes. One of the reasons I love America as much as I do is because I feel as though they are one of the only countries that give pancakes the credit they are due, by them being a staple on most breakfast menu’s over there. Alas, they are quite a rare occasion over here, except really for one day a year, maybe because people feel as though they are a bit of a hassle and don’t fancy getting out the mixing bowls and electric whisks first thing in the morning. Well, I use perhaps THE simplest recipe in the world for American style pancakes, which takes me under 2 minutes to prepare the batter, from grabbing the ingredients out of the cupboard to being ready to pour.
 1 cup of self raising flour
 1 cup of milk
 1 egg
Yep, that’s it! And you can use any kind of mug or cup to measure out the milk and flour, as long as it is the same amount it will work.


Blender, cup for measuring and I use a 1-egg frying pan to get that good ‘American style’ shape 

Firstly, shove all the ingredients into your blender and give it a whizz until it’s all combined. I like to put my milk and egg in first and then the flour on top as otherwise the flour can get a bit stuck to the bottom and not blend as well.

At this stage you can also add some extra ingredients into the batter, perhaps some lemon juice and raisins or chocolate chips?   I decided not to this time as I just wanted to add toppings instead.

Melt a small amount of butter in your pan over a medium heat. I tend to turn on the heat before I start blending to give it lots of time to heat up, a hot pan makes a good pancake and ensures even your first pancake is perfect!


Pour some of your batter into the pan.





Serve! This makes enough for approx 12 pancakes of this size and they are delicious!
